Ladies and Gentlemen--Distinguished Patrons...
Thank you for allowing us to share our passion with you.
How I came to become a "hot sauce guru" must have been purely by
accident--though I could not be happier. I believe that everyone has a
little story, anecdote or reason as to how they became so attracted to
a food that has caused so much biological discomfort. I began using
hot sauce while in the military. Many years eating in the woods, on
ships and in trucks has left me with little opportunity for tasty
gourmet cuisine. Thankfully, pepper sauce came in every ration
container and was prominently displayed in every naval galley. Pepper
sauce masked the taste and made our dining debauchery at least somewhat
palatable. Then my tastes began to rarefy. I started gardening and
learning about food and cooking. I started reading labels. Trips to
the grocery store began turning into trips to the specialty store. The
more eclectic the store, the better chance I would be able to find a
hot sauce that others haven't discovered yet. See, I got tired of
seeing condiment companies that lacked imagination. "Water, vinegar,
peppers and salt" wasn't cutting it anymore. I fell in love with
smaller outfits that were mastercrafting sauces that you could be proud
of. These sauces made me want to learn how grow the components and
really savor the experience of using a fantastic hot sauce. I asked
myself "how could I make it even better? Why doesn't EVERYONE love
this stuff?" So I set out to make my first batch of hot sauce. I took
account of everything i had growing in my garden. Then bought few
things from the grocery store, took a deep breath and went for it. It
was absolutely divine. I passed it out among friends with advanced
culinary experience for a second opinion. They loved it even more than
I did! In that moment, I did something amazing. I shared a passion
and opened people up to an experience. Now, you may be asking, maybe
even demanding to know what gives me the right to presume that my hot
sauces and are of a higher echelon than others. My answer is
relatively simple. Close attention is paid to every batch and every
bottle. Every pepper is individually dissected by my own hands. I
personally remove the seeds, stems, membranes and imperfections that
other hot sauce "giants" leave in there. I don't delegate, pass off or
outsource any of the responsibility. Every batch is made by real,
whole foods. Every bottle was filled by my careful hands in my own
kitchen. This website was designed by myself and my family. The
graphics on your bottle were drawn by yours truly. This is a labor of
love--to share what I have with you. Enjoy our products--and use them
copiously. Perhaps our passion will inspire you to follow your
passions...
